As a Turkish person, I admit that I am really proud of Turkish breakfast culture! It’s more like a feast rather than a quick, 5-minute-prep breakfast. I can’t list everything we eat, but I highly recommend you just Google it for a moment. Sometimes, words can’t fully explain something—it’s better to see it for yourself! As you’ll notice, Turkish breakfast is incredibly rich and offers a seemingly limitless variety of foods.

We also have some special breakfast recipes, such as kuymak (a mix of corn flour, lots of cheese, and butter), menemen (scrambled eggs with vegetables and spices), and a wide range of pastries. Naturally, with this culture, portion control becomes crucial. 😊

Today, I’d like to share a recipe that my classmate and I developed during our kitchen lab course at university. It’s a healthy alternative to one of our classic Turkish pastries, called poğaça.

INGREDIENTS

1 Egg
120ml Yogurt
75ml Olive Oil
280-340g Whole Wheat Flour
4g Salt
1 Packet of Baking Powder

FOR THE TOPPING;
1 Egg Yolk
Sesame - Black Cumin

FOR INSIDE;
240g Curd Cheese
Chili Powder

Instructions

  1. Mix the egg, yogurt, olive oil, and salt until well combined.
  2. Gradually add the flour and baking powder, kneading until you achieve a soft dough.
  3. Shape the dough and add the filling (curd cheese and chili powder).
  4. Place the pastries on a baking tray and brush the tops with egg yolk. Sprinkle with sesame seeds or black cumin.
  5. Bake in a preheated oven at 180°C for about 20 minutes. Since oven times may vary, check regularly and remove them when the tops and bottoms turn golden brown.
